Open Face Avocado Sandwiches
- 1 package shredded frozen hash browns
- 1 large avocado, peeled and sliced
- Shredded Cheddar cheese
- 3 tablespoons oil
- Salt and pepper to taste
- 1 large tomato
- Fry hash browns in hot oil until browned.
- Season with salt and pepper.
- Remove from skillet and place on broiler pan.
- Make layers of tomato and avocado strips on each potato patty.
- Top with cheese then place under broiler for 3-4 minutes or until cheese melts.
- Cut each in half.
